Banana bread: gluten-free​ sugar-free​​

Yup, you’ve heard that right. This banana bread is gluten-free, it’s sugar-free, and not only it is edible but yummy! Since I’ve been gluten-free-friendly for almost a year now, trying and exploring gluten-free bread, cakes and pantry have been new territory for me. Gluten-free-friendly means that I prefer avoiding gluten if possible or just avoid eating bread and pantry if there is no gluten-free version. Furthermore, that also means that I do enjoy having a piece of old-school cake in my favorite place in town or baking something handwritten in my recipe book for my guests and loved ones.

Trying Out Gluten And Sugar Free Daily

Mostly, I try creating gluten and sugar-free sweets at the same time, all the time, and mostly they turn out – well, let’s say I don’t write them down. But this banana bread was not in that box. Mmm mmm. This banana bread is sweetened only with bananas and dates, and those few cashews give that much needed crunchy feeling. And as for bananas, I’m not much of a fan either, with all that is going on in the industry and how people and fruits are being treated. I buy them organic only when I’d like to make myself a treat – an ice-cream or banana bread. That’s where I don’t feel guilty for eating more that I need. #goals.

Simple Cooking

As I really love simple and easy food without a bunch of ingredients that I don’t even know, this recipe is free of those. And it is most likely every future recipe on this blog will be like that – simple, easy, and organic. This thing is moist, tasty, compact and you’ll be asking for more!

There are a whole bunch of rice flours on the market, so I suggest you play a bit with it and see what gives you the best results. What I had was whole grain rice flour, but you can try using Jasmin or regular white rice flour, or whatever you may find.

Cocoa Banana Bread – Gluten-free & sugar-free

Ingredients

  • 2 Large organic eggs
  • 1/2 cup Butter melted
  • 3 Ripe bananas squashed
  • 5-6 Medjool dates chopped
  • 1 1/2 cup Whole grain rice flour
  • 1/2 tsp Vanilla
  • 1-2 tsp Cocoa powder
  • 1/2 tsp Cinnamon grounded
  • 2-3 pods Cardamom crushed
  • 1 tsp Backing powder
  • Pinch of salt
  • 1/2 cup Cashews chopped

Instructions

  • Heat your oven on 180*C, or 350F. Rest is as simple.
  • Whisk eggs and keep adding bananas, dates, and butter.
  • Add flour and on top of it add vanilla, cinnamon, and cardamom, baking powder and salt.
  • Mix until all ingredients are combined.
  • At the end stir in cashews.
  • Put in a mold with baking paper.
  • Bake for about 45 minutes until golden brown.
